Here's a recipe for a classic, restaurant-style Chicken Fried Rice:
Ingredients:
- 2 cups of long-grain rice, cooked and chilled
- 1 cup of diced chicken breast
- 1 large onion, chopped
- 1 large carrot, diced
- 1 cup of frozen peas and corn
- 3 cloves of garlic, minced
- 2 tablespoons of soy sauce
- 2 tablespoons of oyster sauce
- 1 tablespoon of sesame oil
- Salt and pepper, to taste
- 3 tablespoons of oil (vegetable or canola)
- 3 eggs, lightly beaten
- 2 green onions, chopped
Instructions:
In a large wok or frying pan, heat the oil over high heat. Add the beaten eggs and scramble until set. Remove the eggs and set aside.
In the same pan, add more oil if needed. Add the garlic, onion, and carrot, and stir-fry for 2 minutes.
Add the diced chicken and continue to stir-fry until the chicken is browned and cooked through, around 5 minutes.
Add the frozen peas and corn and continue to stir-fry for 2 minutes.
Add the cooked rice and stir-fry until well combined, around 5 minutes.
Add the soy sauce, oyster sauce, sesame oil, salt, and pepper, and continue to stir-fry until the flavors are well incorporated, around 2 minutes.
Add the scrambled eggs and stir to combine.
Garnish with the chopped green onions and serve hot.
